The TD5 with a VNT, larger intercooler, EGR removed, tune and if it's automatic the Ashcroft HD torque converter pulls very well and cruises at high speeds.
Can't comment on the V8 models.
I'd also consider getting an SLS model so that the back end can pump itself up to account for the weight.
Personally, I'd also look at upgrading the brakes - decent discs (consider slotted) and pads and braided brake lines. It's great to go fast forward, but stopping can be a lot more important...
Also install a MadMan EMS and monitor the temperatures. Add an additional automatic transmission cooler if required.

Ive been known to haul 3T with a 2.25D in a series...
any of your choices will tow it...
Id take the td5 with bit of a warm up and trans/driveline beef.

Thanks for the replys I've found a td5 local that I'm going to enquire about in the next couple of days is Davies landrover performance the only place that does the chip and egr removal?

EGR removal is something you can you yourself over a couple of hours.
As for re-tuning / chipping ... try Bruce Davis, Graeme Cooper,Triumph Rover Spares in Adelaide also Td5 Inside (on this forum doing a special now for members I think).
