Both the temperature monitors you referenced use a B3435 NTC* resistor as a temp sensor which appears to have a resistance of 10K ohms at 25 degree C

*NTC = Negative Temperature Coefficient, i.e., the resistance falls with an increase in temperature. A positive temp coefficient would mean the resistance rises with an increase in temp.
A thermocouple generates a voltage when temperature changes.
