I think this setup with the Fourby Fitouts frame system Simon uses would be the ideal setup. There's plenty of room overhead above the fridge in the roof cavity for stowage.

This is my setup, pretty basic so I can remove it and use the full boot.

Waeco CD50DZ so 50 Litre Dual Zone. It still fits under the cargo Blind.
