Same as what you took off, there are holes punched into the gasket to signify the thickness so you need to match that.
It corresponds to the piston protrusion from the block.

I'm about to bite the bullet and buy a new AMC head for my 1999 D2 TD5 (Mine is beyond repair). Just wondering what size head gasket I should go with, considering its a new head?

You should measure the piston protrusion. Never trust what the last person did.
