I like your mods Harry, I have just fitted plastic flares to my Disco , ended up costing quite a bit but worked out great, 4 doors are a bit of a pain to modify.I will post some pics later.

The dynamica rims I have which are 16x8 have around a 30mm offset, plenty for the Sports to cope with (don't hit the radius arms on full lock and haven't adjusted them).
Rims are roughly $140 each new, not bad value for a 16 inch rim. If you like, you can have your Disco rims flipped to the offest of your choice for @$70 a rim.
