I've been on board a liner in conditions like that when I was a kid (1969), watertight doors closed of their own accord at one stage, the swimming pool on the lower decks emptied. A few people ended up with broken bones from furniture in the dining room crashing about. The waiters though were superb to watch with plates of food balanced and very little dropped, even with the carnage going on around them.
As for that footage I would have though that in todays high tech environments to head into a sea like that with that much gear unsecured is bordering on criminal. They would have had good intel on what the sea state would be like.

Not waves but the wind pressure
Below is a video of the SV Concordia which sank earlier in the year. A mate of mine was onboard when it went down. My understanding is that the boat was hit by a microburst (downward wind pressure) which caused it to capsize and consequently sink. All on board survived.

When heavy seas are expected there is a process that has to be followed to prepare the ship - basically everything that is not secured is secured - clearly a lot of heavy gear that should be bolted down was not and the ship was not prepared for the heavy weather that was coming.
Prior Preparation Prevents **** Poor Performance - the Pacific Princess clearly did not do much to prepare.
