Last year I went to a Henschke and Blackmore evening and we met the Henschke and Blackmore families. David Blackmore gave us a good after dinner speech on meat in Australia....the regulations here are such that someone can cross-breed a wagyu with a black angus or similar, that gets up to slaughter weight three times as fast, and still call it "Wagyu".
The marble score will be much lower so on a menu they probably won't even mention it....and the price will be MUCH lower.
Essentially he said that because of the cost of getting a proper wagyu up to slaughter weight and quality, the price is really high...it takes time and good pasture...not to mention constant monitoring and care. His advice was that if you see "Wagyu" on a menu and it's a steak for under $50, it's not wagyu, it's a cross-breed...so just be aware of what you're paying for. And always go for grass fed - superior flavour at the expense, for some cuts, of texture.
The most I've paid for a steak would be about $180 for a Chateaubriand (for two) but we played credit card roulette that evening and the boss lost.....thanks boss ;-)

Was a most enjoyable dining experience but not the most I've ever paid for a good meal.
Another restaurant in brissy i quite like. Have had their top steak twice which is a 600+ day aged master kobe wagyu 12-14+ i think (not listed on their online menu to check)... was about $120 for a 200gsm steak. Luckily also wasn't footing the bill. Though wouldn't have again as there cheaper $45 sirloin are twice the size and also melt in your mouth :)
Best steak I've had recently is, believe it or not, warthog. :o

Two 400g sirloins, two sides apiece, hand cut fries, cornbread rolls, bucket of peanuts and 4 large Buds in Abilene last night - US$44. And the waitresses were kind of cute............
