There is no substitute for cubic capacity!
I'd say its the lack of HP those bikes produce, I agree, they would suck
I had a Grizzly 700, that was good
All gear ratio problems can be overcome with HP![]()

I just re-read the initial post, you seem amazingly good with your hands Rovercare, why don't you build a buggy? Check out the Edge buggies website, they sell plans, I think my next one will be a piranha or baracuda (current one is their older mini sprint design, albeit greatly altered) unless I decide to make it 4WD.
You can make them 2 seaters (mod the plans) and something like a Honda VFR800 would be a good torquey donor engine! The lack of 4WD may be an issue but with the back tyres mine has it doesn't get stuck.

Do any of these higher end side by side UTVs have V or horizontal twin diesels - and what sort of performance do you get out of them.

No, so the diesel ones don't perform at allthe only diesels are in the workhorse type, we have a diesel Kubota at work, however it is hydraulic drive and very slow, 45 is flat out IIRC (although there is a 25kph site limit).
As for the big petrol ones, they fly, have a look on YouTube at some of the racing classes.
