The STs have a reputation for chipping. I've seen this myself in the Flinders, when I ran Silverstone muddies and a friend had STs.
Cooper have brought out the much softer ST-C compound as an option, which is claimed to reduce tyre chipping by 90% and is designed for people that spend a lot of time on gravel roads.
I've had a set of ST-Cs in 235/86/16 on my vehicle for a week now. Haven't had a chance to properly test them offroad but will do ASAP, you'll be able to see the results in Overlander. I can say the compound is very soft and it's a good grippy tyre on road.
