The brewing process isn't complete until the alchahol level is high enough to kill the yeast that produce it. Presumably any bacteria as well. (Not that a Toohey would know anything about brewing of course.)
Incedentaly- Once I was sailing on the Nile and Feluka skipper warned us not to put even a hand into the water.

Of course, the Nile isn't alone in having nasties; even the Brisbane River has dog sharks and turtles. I wouldn't drink its water or swim in it either.
