I wondered the same thing. From what I can see here at 30s in, his hands are firmly gripped to the jesus bar (looks like they can adjust the ride height as well):

My guess is their is a toggle switch that the driver uses for the rear steer, this is how Monster truck drivers do it. At around 50s you can see the drivers Rt hand is off of the steering wheel and the rear steer is adjusted then both hands are back onto the steering wheel.
