I'd go watch that, all the Holden and Ford people might be disappointed though

Spent a few years with a Prody Car team and it is some of the best racing by far.

So, ELI5 (explain like I'm five) - what cars are actually racing, and how do they differ from what you get as a civilian from the dealer (I imagine at least a roll cage)?

Lots of different cars in the classes but they are like you get from the dealer. Production Cars (Prody Cars) can have limited mods usually inline with safety, cage etc. We ran a Mazda 626 and things like brake pad material and the like could be changed but the car was basically as it came from the dealer. The sister car to ours had a bit of a nudge in the front and when fixed, the front spoiler driving lights did not get fitted. As these were standard fit for the V6 model, it was "suggested" they be refitted.

Not sure about right now, but it was great fun in the day.
