Follow the coast West to Adelaide, North to the Flinders/Wilpena Pound, Arkaroola, Lake Eyre, Strzelecki, Cameron Corner, Tibooburra, Mungo... then head home.
Have you been to the Flinders Ranges Lee? Perfect for three weeks out of Melb. Travel via big desert wilderness on the way up, stop in at La Pecora Nera for a pizza in Burra and then via Mungo NP and down the Murray on the way back. Although I reckon you’ll never want to leave the flinders. Don’t forget all the great little pubs, so many great Bush camps in the gorges, and the Gammons too.
I’ll second, sorry third, the Flinders if you haven’t been there. Include the Gammon Ranges/Arkaroola and maybe a few days for a run up to Birdsville and Innamincka via the Strez, Cordillo Downs and Birdsville tracks.
If you want to spend more time on the Birdsville/Innamincka loop add side trips to Coongie Lakes and Muloorina to see Lake Eyre.

This would be my plan, been to the Flinders a few times before but still not done/seen the things i wanted to and are better equipped now.
Only change i would make would be to go inland then head to the coast on the way back.
You could time it to be at the Big red bash in Birdsville.
With that very loose set of criteria Lee I would suggest the Flinders Ranges area for a 3 week trip.
Diverse scenery, great camping spots but also more luxurious accommodation, 4WD treks, wildlife, etc, etc.
We did a round trip from Brisbane last year and loved it (report in multi-state area of forum).
