I've often heard the cry "It was much worse than it looks in the photo!" and have experienced the problem myself taking a pic of someone driving their Landy up a challenging hill, only to have the photo look like they are driving down a flat country lane.It all seems to be in the angles.
The American author of the "4Wheelers Bible" (?) that I borrowed recently made extensive use of re-cropping photos - so much so that some of his pics appear to show Hummers driving up vertical cliff faces for example - but the technique is good. Here is one of my pics re-cropped:
I'm very pleased with the look, it really captures what the hill was like (to me anyway) and nothing has been faked. All that has been done is rotate the pic 10degrees and re-crop it.
Does anyone else have some favourite shot that captures the moment that they'd like to share?

We have the same problem taking action shots when skiing. The main thing I have found is you need to be shooting as much across the slope as possible so the gradient is noticeable. Sky and trees help accentuate this. Shooting straight on just doesn't capture the severity of a hill.
When standing side-on to a slope, you also need to over-correct and angle the camera slightly uphill (much the same as what you are trying to do by re-cropping). Trees are the giveaway, but since the perspective makes them naturally appear to slope slightly up the hill anyway, you can over-correct and have them vertical and the slope will appear steeper.

The other thing it seems to need is a demonstration of the change in angle.
