NSW/SA school holidays -- which to avoid?

Hey there,
Planning a four-week central Aus trip ex Vic in June/July next year. Because we have young children and are locked in to Vic school holidays, choices are try and coincide with the earlier SA school holidays or the later NSW school holidays.
Question is, which state's holidays will result in fewer people making a dash for the Oodnadatta Track? Hate to think we'd be caught in a traffic jam along the way.
Leaning towards SA holidays at the moment in the thinking that there are fewer people in that state ...

There's also a small territory to the north that has school holidays from 20 June - 19 July 2009.

I don't think it will really mater with VIC or SA holidays either way.
