Pizza Dough
1st stage
450gm type 55 flour or pizza flour
330ml water
20gm fresh yeast.
2nd stage
20gm salt
25g caster sugar
50ml olive oil
120gm flour
Mix 1st stage stuff in a bowl, cover and leave in a warm place overnight or so.
Add 2nd stage ingredients in with dough and knead until the dough becomes elastic and a bit sticky.
Leave to rise for an hour, then it's ready to use.
Excellent.
