I don't knead it by hand - well, the first bit I mix up with a spoon. The important bit is leaving it overnight, develops something to do with long protein chain makes it all elastic and bubbly.

I'll mix up the first stage, pack it in a brocolli box and overnight express it up to you, and you can get the oven warmed up while you're waiting.:D
