    The Perfect Potato Chip - The Holy Grail

    Now, I'm hoping this thread won't be moved to the camping, tucker and stuff area because it is really a topic that comes under the "camp fire chat" category.

    The other night, specifically that fateful night in which the Blues suffered the inglorious ......well anyway "that night" - I cooked meat pies (magnificent to say the least) and hot potato chips - which were somewhat reflective of the Blues on-field performance - severely lacking.

    My potato chips -

    Peel spuds
    Cut spuds into chips
    Wash and then soak chips in cold water for about 15 mins
    Cook spuds in deep fryer - not too many in fryer but only cook until chips float to top of oil (canola oil)
    Let chips cool down
    Put chips back into oil and cook once again until Golden Brown
    Lousy chips - soggy, not "snappy"

    Help - I pride myself on my cooking. I tell everyone there is nothing I can't cook - but deep down I know (and now the Land Rover Community of Australia knows) I can't cook good, bloody good, chips.

    Your method is good.
    Your problem is your spud.Spuds aint Spuds.
    I once worked on a market garden and grew spuds.Sorry can remember varieties but uses not.
    OK spuds are bred for different uses.There are boiling spuds,roasting spuds,potatoe chip spuds and chip spuds.A good mashing spud will NEVER make a chip!!!
    Best idea would be visit the WA Patatoe Board(or similar) they should have the varieties and what they are best for.
    From memory,Atlantic spuds which were grown espesially for Samboy made the best homemade chips.Spunta are awsome roasted or boiled,they were a specialty for top class restaraunts.A large banana shaped spud.

    Get the Blue SoO team to cook the pies & chips, you and your mates come up to Lang Park to play the Maroon Legends. The blues may not be able to cook better than you, but I'm sure you will play better footy than them.

    save all that effort and get some mccain beer batter chips, found in the frozen food isle of your local supermarket.
    oven cook so no messy oil to deal with and dam tasty too....

    Havent yet found a frozen supamarket chip to match a real chip done the way Barra tried.His would have been perfect if he had a chip spud rather than a mash spud.

    Here - Here. I eat the oven jobbies regularly, they're healthier, and I'm married
    You can't beat good home made chips.
    They usually have the ideal cooking methods listed on the bags these days.

    Also, make sur your oil is really hot, about 190' I use, for the second cooking.

    don't do them anymore - the missus would have a fit if i deep fried anything - but back in my bachelor days i was known for putting on good chips.

    tiny baby potatoes - smaller the better (russet if you can get 'em but Chats work ok too)

    peel, hit soundly with a meat mallet (enough to break the structure of the potato without squishing it to bits), soak in cold water, deep fry until Golden brown, toss with spice mix of sea salt, pepper and ground peri-peri. Serve heaps with the biggest steak you can find or a good garlic aioli.

    ugly chips but bloody tasty.

    Some of the newer no-cholestrol oils(ie rice bran oil) make them a tad more diet friendly.

    Thanks for the replies and tips fellas

    Yeah, I cop the "those things are not healthy" etc. - but what can you say "Chips are chips" - although as LandyAndy said "Spuds are not spuds".

    The "commercial" variety can be good but I reckon if I can get the good-spuds the home-made chips will be better.
