Why don't you try the peak tram
I'm off the HK for a 2 day conference on Thursday and have all day Sunday free before the flight home at midnight. I've done Kowloon and HK city previously and was thinking of taking a tour for the day.
What's worth seeing/doing?

If you are bored of sightseeing the citigate outlet mall (near the airport) is seriously cheap. I had a day stopover there (no nights) last week so I booked a day use at the Novatel to allow a kip. By the time we had a nap and some lunch there was just enough time to walk around the shops and strain the baggage allowance more than the credit card.
Rockport shoes are $350 in Aus (I won't buy them) - $70 at the outlet shop (bought 3 pairs).
Ralph Lauren was about half the Australian price, etc.
I hate shopping, but I was so tired after the overnight flight with no sleep that I was (fairly) happy to follow the wife around the shops. But it was so cheap I bought more than she did.

I was there in May. The big Buddha is pretty impressive and the cable car is great. Just catch the MTR to the cable car station and away you go.
The peak tram is very good too. You want to pay the extra to go "right to the top" (lookout). Maybe don't bother with the tram back and catch a bus. It's a great ride down.

The Peaks a good idea, if its a clear day, as is a bus trip to Stanley, theres a very good pub there, over looking the water well worth a visit....
The Smugglers Inn This small pub on Stanley’s waterfront is named after the smugglers who used to inhabit the area. It’s one of the oldest English style pubs in Hong Kong and possibly the most authentic. Dark wooden beams cross the ceiling and the tables and chairs are made from old barrels. There’s a dart board and a juke box – both of which are regularly in use. You can forget fancy cocktails here, but there’s a decent range of beers along with basic pub grub. Been longing for a ploughman’s? You can get a good one here. The Smugglers Inn fills up alarmingly early in the day, and is a firm favourite with the expat crowd. The vibe is relaxed and everyone’s friendly. It’s definitely worth stopping by to sip a cold beer, chat to the regulars and gaze across the bay.

cheap watches, cheap booze, had a monster night at Smugglers after the 7's, sun was comming up as we left, just me a mate and the barman...awfull the next day.
You need to know who to ask for the 'special' watches, it's a hilarous performance that ands up with going through a restaurant kitchen to a specific 'brick' removal from a wall, then pick a watch, i got a perpetual motion 'Brietling' for $50, works a treat!
See if Wanchai still has the girlie bars.
