    Red face Another culinary triumph...I hope

    Supposed to be camping this next 4 days, camper trailer is ready etc but most of us are sick, so staying around home/ day trips only now, SOO, to the kitchen I retreat


    Mmmm, trying out a skillett-cooked, marinated spare ribs in Merlot sauce, with a horseradish creamy potato accompaniament.
    Sealing the seasoned pork ribs first, adding merlot, crushed tomatoes, sugar, balsamic vinegar, garlic and onions and then baking in the skillet, covered, for 1.5 to 2 hours.

    Looks and smells good so far, but I'm in new territory so I'll let you know how it turns out

    It turned out beautifully!! certainly a cook- away- from- home dish Carlos! really easy and tastes superb

    We'll have to come over to cater for you lot now you have an extended family

    Any thoughts for tomorrow? Looks like rain Sat and Sun

    Prob with us is that Kerry is booked for both Sat Fri and Sat, only leaving Sunday! So what we can do, if we cant go out, is do a cook up here

    Hi D and B,

    Yes it is a really easy and very tasty dish, can substitute Pork for Beef if you want, but it is the mixture of horseradish and cream mashed/ wisked potato that wins here as an addition to the main meat component and its sweetness/ caramelised onions and garlic. Heavenly Threw in some julienne carrots and Broccoli florettes and voila

    The book I got it from is called 'The Cast Iron Skillet Cookbook' an american publication the better half discovered at Amazon bookshop online. I'll be revisiting the pages again REAL soon

    O.K. A nice simple one for you for tomorrow night.
    Steak with a nice tomato, mango salsa on bruschetta.
    First, de-seed 2 x tomatoes, cut into pieces approximately 10mm square.
    Do the same waith a mango, or used a 425g tin (drained of corse) they are good at about the same size as the tomato bits.
    Add 2 or 3 chopped spring onions.
    Add about 1/2 a cup or so of roughly chopped basil (fresh is best, but a good squeeze from a tube will suffice)
    A splash of olive oil
    A couple of splashes of balsamic vinigarette
    Whack it in the fridge.

    Grill up three nice scotch fillets (I like a nice morrocan seasoning, but on its own is good)

    Take a loaf of unsliced bread - prefferably something european like pasta dura or pana de casa.
    Slice thick - about an inch - brush with olive oil and griddle both sides till golden. A BBQ is the best for this.

    Place steak on top, dress generously with salsa and salad greenery of choice, serve with some oven chips or wedges.
    Lastly, enjoy.
