    We are picking mangos now, we will have about 30 this year. Tree ripened are just so much nicer than the bought ones. We had a mango cheesecake last night.

    The 3 in the pic were picked this morning - 2.6kgs all up - the biggest one is 1kg. I hope the flying foxes don't spot them.

    Mango Pie
    1 packet Nice biscuits
    125 grams unsalted butter
    Melt butter and mix with finely crushed biscuits and line pie dish with mix. Bake blind for 10 minutes.
    Blend 1 ripe mango
    3 egg yolks
    1 dessertspoon of gelatine dissolved in 1/4 cup hot water
    1/3 cup sugar
    Heat above mix over hot water stirring until thick. Allow to cool.
    Beat egg whites until thick, fold into cooled mango mixture.
    Place into biscuit shell and chill. (Can be frozen and stored for 3 months at this stage) Top with whipped cream and fresh mango prior to serving.
    Makes 1 delicious mango pie.

    Thanks for that recipe Bush65...will give it a go

    Our cheesecake recipe is similar, except we use Philly Cream Cheese instead of eggs.

    Still tastes nice though.
