Try this........."User CP" then "Messaging & Notification" then "Default Thread Subscription Mode"...from the drop down list and "do not subscribe"....

But also when a thread that I have subscribed to (and am receiving email notification of new posts relevant to that thread) gets hi-jacked and goes completely off topic then I no longer wish to be notified of the subsequent irrelevant (to me) posts.

the second part is easy, you can easily unsubscribe (or alter) from ones you have already subscribed to

tick the subscriptions you wish to alter and then you can manipulate using the selected threads dropdown.
