Ok, so I redid the bars with 25mm x 3mm ( only $20) so the ply that fits on top will be flush with the boot floor segment near the latch mechanism.
Also i took a photo of everything I can fit in extra now, as normally you only got space for jack and tools, but now i can fit in a snatch strap, jumper leads, tool kit, fire extinguisher, first aid kit, puncture repair and still have room for more.
I also had plans to make the right hand half panel removable with latches to open, but decided the extra work and complexity was not worth it for the small amount of times i would need to open it, as you can still get to that section by sliding things in from the left hand opening under the fridge, and i will just add labels to remind me where everything is stored.
So doing it again, id likely just do the ply panel all in one piece. Also the carpet cover was a left ower roll from our caravan, so you can see the sections. I just used a staple gun to fix it in place.
Showing how much space is actually available once the foam is removed: also new lower bars (but thicker metal, so still very strong, i can stand on with no flex. Also high tensile bolts (M8)
The fridge is bolted through the bars with M6 high tensile bolts and nyloc nuts. The plywood is attached with counter sunk

Jigsaw for cutout and curves: access hole for tyre lowering. could use socket and extension for smaller hole.
