Just curious to know... If one pump goes down can the other continue to do the job?

It can on mine provided the valve block continues to do the right thing.

As far as I'm aware there's no reason why the second compressor would cease to operate if the primary one fails. Provided the only link they share is the on/off switching. If they share wiring loom and relay things may be different. Due to the Christmas holidays I've only got one running at present. I'm not handy enough to wire it up myself so I'll leave it to an auto electrician to do. But I have run the new one solo and it cuts in and out as tank pressure requires.
Here's a good question for the electrically minded out there, if I do decide to wire it up myself, what size wiring should I use, and what do each of the three wires on the compressor do? I assume the small orange one is switch, the black is earth and the other is positive via relay? Correct me if I have it wrong!
