Turns out there is a standard high tensile bolt that can be used (with modification).

The bolt specification is NC 3/4 diameter X 16 TPI.

The modification needed was to machine off about 1/16 off the head off the bolt and also to shorten the shaft so that its about the same length as the shaft off the dog gear plus an extra 3/8 to account for the thickness of the driving plate and a 3/4 spring washer.
