I think given the simplicity of the seat box you should theoretically be able to fit anything in there, but the bigger the seat the less rearwards movement it would have. Should be relatively easy to remove the original mountings and fit rails to mount other seats on. Even some of the cheaper aftermarket seats from the auto shops will only set you back a couple of hundred dollars a pair, or you could visit the local wreckers. I've seen Ford Falcon seats used in Series 3s. You may find that you will need to have replacement seats passed through an engineer or certified with some sort of modification inspection, you would need to check with your local transport regulator (in Qld the inspection is around $150 which can be more than the actual modification)
Remember that fitting wider seats may make it impossible to retain the middle seat so your seating capacity will be reduced by 1 - this may mean your vehicle needs the seating capacity altered which will also possibly need a modification inspection.
You would be best to check before you start doing any work to see what you are and aren't allowed to do. Maybe seats from a later model like a defender would be easier. My series seats are standard except that they have been reupholstered, and are pretty comfy. You can get high backed standard seats, meaning no mods are needed - there is a set on ebay at the moment for about $250.
