Aluminium & stainless don't like being together if there is an electrolyte (water with a few impurities).

If it's going to be a trailer queen then shouldn't be a problem 
To be honest I haven't seen too many problems since I left the UK (salt used on the roads during winter), here if it was a beach car it may cause issues.
Bear in mind that the item listed isn't a kit of everything needed, it's just a selection pack and you'll need many more nuts & bolts if you want to replace them all on your Landy.
Better to build up a relationship with your local bolt shop, mine now know me well enough that I get a discount. Better pricing if you buy a 'box' but they will sell bolts & nuts individually, zinc plated is about as close to original as you'll get easily nowadays.
They will carry washers in different OD's so you can get floorboard washers, problem is that a lot of them are made of cheese. If you can find Wasca washers they are usually about the same price as the Chinese ones but made from a decent grade of steel (and made in Australia !).
