It has probably been done, but at least one has been described here to convert a wagon into a dual cab. Fitting a proper ute cab would probably be cheaper and far less hassle with engineering approval - except that there is likely to be a real shortage of these with all those buying Perentie soft tops and wanting to change them to something relatively thief-proof.
