no reputable tyre fitter will put the 12.5's on a 7" rim....for good reason
    The 285/75's are a 10.5" btw, not 12.5's.

Your 285's will be fine on your 7" rims any wider and you will need 8" rims though

Not legally (and we have to get to tracks some how)

And are more prone (proved it) to rolling off the rim when aired down.

Also more prone to staking offroad.

To wide a rim, however, will increase the probability of the read rolli off the rim.

isnt a 285/75x16 = to 33x12.5 on the tyre calculators that what i get

    and a 255x85x16 = 33x10.5

i wont fit a tyre to wide for a rim but was not sure what the 7" would take in width

Unfortunately you are in a minority. You are actually less prone to roll a tyre off the bead with a narrow rim (within reason) All the rock crawler guys run anything up to 12.5" wide tyres on 8" rims without the need for beadlocks.Having said that,it is important that you don't run them under inflated at speed,or you will roll off the bead. And as far as legality goes,it actually come down to the manufacturer,as they all seem to list a different rim width for a given tyre size, and nothing was mentioned in the original post about legalities anyway,as flipped disco rims no longer meet the Australian standard and are non ADR compliant. And yes I agree that more sidewall flex will make the tyre more prone to staking. But that can be minimised by buying tyres with decent side walls.
