Do you actually need a crab bar? A lot of dual cab utes have passed simply with reinforced plates behind the cab (rodeos etc) so maybe you can get away without it and still be safe. In our Xtrail the restraint point is on the cargo area floor so maybe yours could be fitted there too.
I have been to Auto Extras a couple of times for advice in my planning to fit troopy seats back in my series 3 and they were very good. He is very open to letting you do the work yourself and just take it to be complied, he was happy to give me all the specs and requirements needed.
Maybe see if you can source a bar elsewhere cheaper and fit it according to the specs, may work out cheaper.
Yes, you do need one, because the floor of a defender is aluminium and just tears under load. The CRAB runs between the steel framing either side of the body.
I think you'll find something similar with the Series 3, that you'll need a steel load spreader under the sides for the seatbelts to bolt through.
