Check the sensor where it's bolted on the thermostat housing, I had this problem once after I washed it.
Fill it up with CRC or similar and it won't do it again, the sensor itself may need replacing

Yeah, I found the sensor after a while. There's quite a few similar looking sensors attached to the block.
I tried to unbolt it, but it wouldn't budge, but my efforts must have been enough to give it proper contact again, because it hasn't happened since. When I manage to get it off, I'll chuck a bit of graphite grease in there. Don't ask why I don't own a can of RP7. It's the next purchase. Haha.
