The engine isn't going to fall out due to slumped mounts. The fuel cooler is likely to be leaking coolant because its O-rings need replacing, which is a DIY task for many.

Down in sydney, having the 220k kms service at graeme cooper.
So far i've been told i need:
Full replacement of ATF cooler and lines: Appx $1000
Replace Collapsed Engine mounts: $650
Replace fuel cooler (or was it heater?) $350.
I MAY have gotten the prices for the last two mixed up.
Any thoughts on these?
I've already given the go ahead for the ATF cooler, but not the other two.
Are thy vital? Or can I afford to not fork out an extra $2000 all up?

I wouldn't bother doing the fuel cooler. When I looked I don't recall anything leaking out of it. That said, things may have changed since, especially if the hoses have been played with and the O-ring seal broken.
Can comment on the engine mounts although it does surprise me.
ATF cooler and lines - yes, there was definately a problem there.

We had a leaky fuel cooler, it very quickly dumped all the coolant on the floor! It however was fixed with a 50c O ring. Most work shops want to replace the whole cooler out of laziness
"dropped" engine mounts will be causing vibration through the car especially at idle. Changing them is a DIY and they are stupidly expensive, they are a fluid filled system. I didn't think I had a problem but couldn't believe the difference new ones made. If you don't think the vibration is bad then leaving them go a while longer will not hurt, as mentioned the engine won't fall out, it just means the mount is rubber on rubber - like most other cars... The new mounts will sit the engine quite a bit higher.

All 4x4 in Newcastle do a kit for the fuel cooler pretty sure it was only $30 odd dollars.
It's worth picking up a pair clic-r pliers to do the fuel cooler. It makes refitting the original clips a breeze and it doesn't look like a bodger DIY mechanic has been working in the car
It's also worthwhile using double o-rings. The housing has a groove for a second ring.

A pair of your grandfather's old nail pincers with the jaws ground back to a more acute angle will do the job of refitting the Fuel cooler clamps.
Use the viton 'O' rings - use search to find the actual part number, available from most bearing/seal suppliers.
Take the cooler off and replace 'O' rings in each end while you're at it.
