No it's going to go fast in both the speed and the fuel. When I was young and stupid and that engine was new (1987-88), I used to sit at 120-140KPH on the Sydney Melbourne Hume Highway corridor. Only got clicked once, at 132Km through Glenrowan. :o Have learned my lesson and sit on the limit these days.
The original conversions cost $14K, so weren't cheap and my '85 model had only 23K on the clock, it was however a Torqueflyte727 which was part of the fuel problem, a ZF 4HP22 would have saved some of the fuel cost.
The fuel was the main issue that I was looking into and I was attempting to get fuel injection onto it. In the end it was easier to go with the 4.6, however that ended up costing me $27K because I had a ZF and 120 litre tank fitted at the same time.
If the vehicle is still running with the Rockhamton engine it's probably already got the required mods. It would be worth investigating if it has top hat liners which would make it a much more reliable engine. As for the head gaskets, I would contact Bruce Davis in Sydney to see if they still have access to head gasket stocks. When he was in partnership with his brother they used to get them made in the US.
If your interested, you may be able to get someone to cut and shut a fuel injection manifold into the P76 manifold. I tried to do it with spacers, but they lifted the plenum so high it hit the bonnet. That would be the way I'd go if I were keeping the 5.0litre.
