Coolant leaking
After a short drive today I removed the fan belt to clean it after getting dirty on the weekend (it was squealing again) and noticed some coolant under the car and appearing to come from the back of the water pump. After putting the fan belt back on and running the car for 15min I could not get it to leak again,nor after a couple of short drives. Bit nervous.
Squealing belt has stopped though.

The squealing could have been the water pump pulley bearing. In the 10 years I owned my Disco I replaced the water pump a couple of times. They don't last. The leaking could well be an indication of the pump's demise. The replacement of the pump is relatively simple and the gasket replacement at the same time is required as well as an inspection of the bolts and replacement if corrosion has taken it's toll there.

sounds like its leaking under higher pressure, which would explain why no leaks after running for the short period you did.
check all hose clamps are tight & surrounding join for signs of coolant at the same time, also water pump gasket, shaft seal hole for signs of leaks. Bypass hose sneaky one leaking on the underside & tracking down the back of pump/front cover region.
Bypass leak can also get onto belt & cause squeal, same as leaks from heater rail hose leaks where they rub through on the metal tang which houses the plastic clip for the hose.
