it's just a protective layer. serves no other purpose.

I had a battery box made up that is flat bottomed to house 2 x N70 batteries with plenty of head room to the seat box cover. With the plastic cover removed i gained a small margin of clearance and gained a deeper battery box.

Am I correct in understanding that you cut the bottom out of your existing battery box and installed a new one at the level of theplastic cover under the cab?

The plastic tray is usually there to stop any battery acid getting on the metal,as it corrodes it very quickly.

My MY15 Defender had no plastic tray in the battery box, it did have a plastic skin on the outside under the car. A form of stone guard I thought.
By all means get a Defender. If you get a good one, you'll be happy. If you get a bad one, you'll become a philosopher.

Yep. I'm yet to take pics. Lokka made it up for me. Did it in stainless for corrosion resistance. My primary battery is about 330mm long so larger than an N70.

We have a pair of 330mm batteries in our Puma in the standard box. They are a bit tight and fit left to right. We removed the plastic tray, figuring this was the first Defender to have such a tray.

Your Odysseys are unlikely to leak so I wouldn't be too concerned.

I have never bothered altering the battery box area as I have always managed to squeeze in suitable batteries. If you do alter your battery box, aluminium and stainless tend to corrode but I wouldn't be too concerned where you are in the dry west.
