Riddle me this.
I have wolf rims 16 x 6.5" with +20.6mm offset
If I widen the rims by adding 50.8mm (2 inches) to the outer side will this give me a 16 x 8.5" rim with -30.2mm offset?
Are there any issues with doing this?

The only issues I would see are the legal ones if planning to use it on the road. Without knowing what vehicle it is a bit hard to have any other comments.

Yes they will be -30.2, widening the wheel track and tyres outside the guards will be your issues with the law.
Installing wider wheel arch flares should solve the tyres outside the guard part but as for legalities of widening the wheel track I can't be certain.
I assume though that I can't be far off if -25mm offset rims are available from 'Les Richmond Automotive'
Available but not legal. From memory can only go 15 or 25mm different offset.
Also why 8.5", why not 8"?
Seems to be the most common recommended rim size for 35'x12.5' or 315/75R16 tyres
I would just go 8", much more common, never had any dramas with that size rim and a 35" tyre
