On my D1, removing the front grille lowered both coolant temps and EGT.
Coolant by about 10-15°C in hot(35+) ambients.
EGT by about 50-ish or so .. hard to say exactly as conditions, road, load, etc all vary.
D1 front grille is quite restrictive, dunno about the Defender tho.
Inc, go see Rob at Brisbane Dyno Tuning. He is a 300tdi expert (Weeds put me onto him)
My 300Tdi was dyno tuned by Rob a few years ago. I have posted the Dyno results several times on the forum but here they are again. This transformed the driveability of the Defender.

My 130 weighs 3Ton in normal driving mode with 285/75 MTZ's tyres on 16 x 8 rims. I have upgraded to an Allisport intercooler, straight through 2.5" exhaust (no mufflers at all), silicone turbo hoses and I have even had the kink taken out of the steel pipe between the turbo and the intercooler (there is a press bend in it to get around the suspension strut cover).
The truck is now great to drive. I don't tow a caravan and never plan to, but I do regularly tow a dirt bike trailer with 3 bikes and camping gear. I do keep a close eye on EGT's going up the range (like behind Landsborough or Cunninghams gap) and always drop down a gear when temps get near 700.
Normal highway cruising - I get EGT's of 450 - 500
My EGT probe is before turbo (EGR blanking plate).
Sounds like your pump is not tuned properly. Like others have said, a clean air filter (genuine) is a must. Also check/clean your existing intercooler, pipework and intake manifold (oil can build up in these areas).
dropped the intercooler this afternoon and will give it a good cleanup and see where we end up.
certainly looks like it needs a clean...
