I don't know what others think, but prolonged EGTs of 720 on a regular basis would scare the hell out of me, let alone 780. I reckon about a 1/4 turn back on the fuelling screw would be the very first thing I would try.
It seems lots of people play with the fuelling screw first, when really it should be last. Sure, the results are immediate, but have deleterious effects on economy and longevity.

It's all pretty simple, and a 300TDi can go as well as a stock TD5 if done correctly.
