Just to close out this thread - I only got around to looking at this now.
I got a new hi flow 82c Trico (Trico is just a Motorguard thermostat).   Drilled a couple of holes in it to allow a little coolant flow over the  closed thermostat and tested it yesterday.
Vehicle parked with no shroud on the radiator with aftermarket cheap  temp gauge - it seemed to open right on 82c and settled on 87-93c when  fully open.  My EM2 Engine Watchdog sat on 78-80c when water temp was at  90c which is about what the engine used to sit on when stopped at  traffic lights on a warm day.
So seems to work OK. 
My thermostat housing has an extra outlet that is currently blocked.  The LPG system is in the heater circuit so when the heater is off no coolant gets to the LPG system so I have a manual bypsss set up but I have to stop and get out an open the tap if I want to turn off the heater. Sometime in the future I will run the LPG off this thermostat housing outlet which will allow coolant to run pass through the housing when the thermostat is closed - this will leave a separate circuit for the heater.
