I rather doubt that the grease for greaseable prop shafts etc is very critical, as it is replaced regularly (or should be). The grease spread round probably was the grease that did not get into U-joint rather than the grease that was in it (unless the seals have failed - and even then centrifugal force will keep the grease in rather than throw it about, if you think it through for a moment). If you are doing a lot of wading, grease with high water resistance is important, but I would incline to greasing after each dip, or at least at more frequent intervals if doing a lot of wading.
On the other hand, the places where type of grease IS important is wheel bearings, which need high temperature grease, and anything that is packed for "life" or at any rate for long intervals, where very specific greases are likely to be needed, such as MoS2 greases - but go on what the manual specifies. In general, the longer the service interval, the more the type of grease becomes important - again, go by the manual if in doubt.
