Just wondering what external engine mods can be carried out on v8 Disco 2 engines to give them some more hp? Any help would be appreciated.

The NAS disco needed the 4.6 to compete with all the other similarly priced SUV's over there. They generally had bigger and more powerful engines than the D2's 4.0.

1 GEMS low Comp?
2 Thor low comp?
3 Thor high comp?
GEMS can benefit a little from a Unichip or other interceptor.
I found heads on my old 3.9 gave 6%. Thor manifolds will give much more torque down low, which is good in auto.
My 3.9 RRC with 14CUX has 50% more down low power with Unichip, heads, Thor inlet. I understand that Unichip gains on GEMS are much less , but 10 - 15% still is quite a bit.
Thor is more difficult as the Motronic is pretty optimised, and any changes eg heads may be negated by Motronic reverting to known values. Definitely no cam, exhaust. AFAIK you must even use the OE type plugs as Motronic reads the resistance and knows of misfire even.
