The warning light came on a couple days after driving through a couple hours of consistent rain. I replaced the filter and still have the warning light. I then removed the sensor from the filter and cleaned it off with compressed air and connected it back into the circuit without installing it back into the filter and still have the warning light. It's a known problem, the sensor is probably faulty, you can either replace the sensor with a new one or tie the wire up out of the way and replace the sensor with a M8 bolt (i think thats the size) and rubber washer.
If you replace the sensor, it's a good idea to remove and clean it every now and then, this is what i do and so far (touch wood) it's been fine, me personnally i'd rather have it for piece of mind, if you've seen the threads on the new Defender about water in the engine, (they don't have any sensor) then that would be enough reason for me.
As said above on the later TD5s it was removed altogether.
