Unless the fan is catching on something, I doubt it will be causing the noise.
Normally when the viscous goes it doesn't really start to make a noise, the fan just doesn't spin as hard when hot.
You need to pin point the noise if possible.
As you said, remove the fan and see if that helps first.
Then the serpentine belt, recheck noise.
and lastly the a/c belt, recheck for noise.
Sometimes a noise comes from the flat side of the belt contacting an idler.
When I changed my a/c belt I got a noise when cold at startup that dissappeared a minute or two later.
It was the new surface of the flat side of the belt sort of squeaking as it passed the tensionor pulley when cold.
I roughed up the belt surface a little, noise changed but still there.
I then roughed up the surface of the pulley with some sand paper, noise almost completely gone, just there for a few seconds now when starting on a cold morning.
Putting water, talc, belt grip, would quieten the noise for a minute and then it would be louder than ever.
