When I bought some uni joints from hardie spicer recently, it said on the box NOT to use a moly grease. If you were going to keep only one I'd go the high temp EP rated non moly probly. The moly stuff is good for sliding joints like tailshaft splines.
I don't think there are major issues with grease aging if it's sealed, it's just that the newer greases will have "newer ratings", and may have the latest tech etc - same as for sealed containers of oil (of course when open there would be some slow oxidation etc)
I'm no expert if anyone knows better!
