No problem other than you have to remove the centrebolt and reverse it.
While you have the spring pack apart, clean the leaves and lubricate them before reassembly.
Ever since I got a Mitch hitch for my D3 my box trailer has been dragging its arse, well not quite, but it looks a bit silly and it is on a definite angle and needs to be lifted.
I am considering just taking the U bolt mounts off the leaf springs and mounting the axle under the springs instead of on top.
Any problems you can see with this plan.

It's a pretty standard and easy job to under sling the axle. As stated just the center locating pin needs to be flipped. If you need further fine tuning you could change the tyre size.

Yep, when I did the spring over to my trailer it gave about 5" of lift, so depending on the spring pack size you have it will be pretty close to what you're after. Im pretty sure I just trimmed the excess bolt thread after the nut in the spring pack and then reassembled, but check that the nut is compatible enough with the axle pad to do this otherwise you will have to flip the bolt instead as the others have said. If you've got brakes, just check clearance. I don't recall issues from the trailers we've built at work, but I'm not sure why that is as the brake cable would be close to the spring pack.

Thanks all, done. Worked very well, no hassles. Even got to play with my new winch which worked very well to flip the trailer over
It is almost there now but still sits a bit high on the hitch. I am wondering if there it is possible to flip the landrover D3 hitch tongue over and put the ball on the other side which would drop it down just that last little bit. Any problems with that?
Yep undersling it I have done this on 2 x caravans, a jayco camper and 2 x box trailers. My 6 x 4 and a mates 7 x 5, easy and will give the result you desire. When there is brakes involved it gets a little more complicated but reasonably easy done. I (with my neighbours help) have just done my caravan in the last couple of months. Made a huge difference in height.

Another quick question. To me it seemed more stable to put the U boys around the spring and the plate under the axle, but I saw a picture of a professionally under slung one which had the u bolts around the axle and the plate on top of the springs.
Does it matter?
That's how they are designed to be run. Fish plate on the spring, U-bolts around the axle. Those U-bolts don't suit wrapping around the springs which are a different size and sometimes shape. There are some 4wd spring over (this is the name for it, not under slung which appears to be an AULROism) kits that sets up the U bolts and fish plates as you say so it can be done.
