Careful configuration/instalation of the probe is required to get accurate temperature readings.
If you have nanocom watch the IAT and MAF readings when that high EGT occurs... also if the crankcase breather(depression controll) valve is old replace it just to rule it out cos an old one can mix up MAF readings also it will be excess of hot air in te intake which leads to higher IAT and so on
if you bypased the wastegate modulator shorten the rod with 3-4 threads to increase boost a bit also unplug it's electric connector to make the management go into default with that otherwise the whole fueling is mixed up due to the fact that the addaptive strategy for acceleration expects a certain boost according to the wastegate controll ratio and it gets something different... it depends very much on the fuel map version though so only a drive test with the modulator unplugged is really relevant, it can be better or worst only the reality is important

I've read this thread now thank you. But it talks about 300TDi, i'm not sure the TD5 would be the same. Some people say they have bent the probe, it does say on the packet not to modify the probe or wire length in any way.
My probe is mounted directly on top of the exhaust manifold were it turns into one pipe. There was a round dimple on the top and I drilled though right there.
The end of the probe sits about 1.5 mm above the internal wall of the bottom of the exhaust manifold.
The gauge reacts quickly to changes higher or lower in temp.
First - fix your boost.
19psi, but if you get it to 20psi you should still be below the over boost cut off. The problem is depending on your remap you could still end up with chronic overboosting, hence why some re map providers mask with backing off the turbo boost. You will then need a boost box to limit the max signal seen to counteract or a less aggressive remap.
If you get too high on the factory map and get over boost induced limp mode, just back off the adjustment a bit.
In the end of the manifold where the EGR pipe used to go. I realise this isn't as accurate as the OP, but 730! holy Moly!!!
For reference, the standard td5 boost is 15psi, or at least thats what mine seems to run. Reading taken from the inlet manifold on a mechanical gauge.
If the tip of you probe is so close to the wall of the mainfold, maybe that is swaying your readings???
It seems that your's is low on boost if you get only 15psi, the standard D2 Td5 is set to go up to 230 KPa MAP reading which at average 100KPa ambient presure means 1.3Bar(close to 19psi), 15psi is very close to 1Bar which is the default mode for faulty AAP sensor, the Td5 Defender is a bit lower(MAP=210, around 16psi) cos it doesnt have the wastegate modulator... mine went up to 1.22 Bar reading with nanocom then i shortened the wastegate rod and now i get 1.31 under full load with the original ECU...even with the remapped one the boost is almost the same just that it has better throttle response and more power at low revs
