Firstly you'll have some difficulty finding deadlocks that are ADR approved.
After that if people see deadlocks, they'll think that you have something worth stealing and they'll simply go for the glass.
So before you go to the trouble, play it safe, keep everything of value out of sight. Next consider mesh security screens on the rear windows and doors as well as a cargo barrier, which is good for occupant protection in a crash as well as making relatively secure cage in the back for valuables. After that you could consider a deadlock on the rear door.
Addit: If you have a defender with glass held in by "key rubber" seals. Remove the glass and turn the seal around so that the "key" is on the inside of the vehicle.
