Looking at new shoes at the moment.
Considering going to an 8" rim, with 0 off set.
Any opinions on wether or not the size and off set of the rim will suit.
Probably will use 265/75/16.

Offset will be fine, but on 265/75/16 you might as well stay on 7" wheels.
No real need to lose 1/2" (each side) rubber protection on your rim edge...

I was thinking of 285/75/16 but I thought they would be far to big and would cause some rubbing issues ? Your thoughts..
I think 285/75/16 are equal to 33" ?

Obviously guys all have their own opinion on tyres. Mine is that except for the cosmetic "tough" look of the 285, there is actually very little gain other than higher fuel consumption. Deflated sand footprint only works longitudinal and there is no benefit in being wider. There will most probably be quite a bit of rubbing as well, especially between a zero offset and your wheel arches (unless you are planning to lift as well?).
The 255/85/16 remains the best overall tyre for a Defender, but there are more strain on components and that's the reason behind LRA's position on the issue.
265/75/16 is in my opinion the best "compromise" to keep warranty happy, fit the Defender without rubbing and still find a balance between an aggressive pattern and enough blacktop grip.
Seeing we have 2 years of warranty left to worry about, we opted for the 265/75. We also chose to stay with the alloys. I did have the steering stops wound in so the 235/85's would just touch on the radius arms, but it appears I am only going to have to wind them out 5mm or so to stop the new tyres touching. SO still a tighter turning circle than where the standard steering stops were when we took delivery
We have just done a casual 60km on the black top & a quick run along the beach
Very impressed, a little bit of extra road noise as expected at 60km/hr & below on the hot mix. But no increase in noise to speak of once we are above that
Looking forward to see how they pan out of the coming kilometres.

I still think the 285's suit the Defender especially with a 2" or 3" lift at the nose. It levels the hole thing up and gets rid of that 'saggy front' look. Geared it up a bit to... the speedo is now correct! Still can't seem to be able to get those nice big pics to come up like the post below! Computers are suppose to be simple!!!
