One thing to check is the offset of the rims and make sure they are actually -25.
This threads a few week old so might no longer be relevant, where abouts on the inner guard is it actually rubbing? i ran 35s on stock and very sagged county suspension, i have to trim a few things but nothing to serious, one option for the inner guards is you could possible adjust them as there is a fair amount of adjustment in how they bolt up to the chassis and outer guard, you could even go to the point of redrilling mounting holes etc and lifting them even further, its all very simple how it goes together.
