The temperature sender and the temperature gauge should be matching, they go in pair. Any mismatch will give you reading error.
Experienced this problem when I replaced the 2,5 petrol engine on my 1989 Land Rover 110 with a V8, I had to change the temperature sender to match the temperature gauge.
Did the same when I replaced the original Gauge with a VDO model.
As for the fuel gauge, I am not sure if the same pairing method is also applicable.
